THE WILDE BEEST
CT Turgeon – a flavourist creating taste-twisting food.
The restaurants name obviously grabbed our attention while we were looking for a place to eat in Kingston, where we decided to stay for the night. We found a philosopher in the kitchen as he looked for that OH SHIT moment in his cooking. The result? A night to remember.
Welcome. The road to the table before you today is longer than it seemed... Your own trip tonight, the final mile of the winding path I’ve traveled through food, its characters good and bad, its places near and far, its moments great and small. Hang up your phone. Trust your waiter, trust the kitchen, try new things, have one more glass and most of all... make the most of tonight.... It’s been a long time coming...
The above quote is in the introduction of The Wilde Beest menu. Say no more. Chris Turgeon moved to the Hudson Valley after a long and successful career at various restaurants, among them a 2-star restaurant in Chicago. When Chris moved to Kingston, he got the chance to do what he wanted from scratch.

This time, he’d do everything exactly his own way. Creative cooking with a taste-twisting menu in a restaurant that is a farm-to-fork style, with one purpose:

“When people taste my cuisine, I want them to have an experience that goes beyond food. I want them to be like: “Oh, shit, this was something else!”

The words come directly from the laughing, hard-working man in the open kitchen, while he flambés scallops, scoops carrot vanilla puree, drizzles cashew dressing, and pinches porcini powder.

We’re not even gonna try to describe the amazing food. Go there. Meet Chris and his friends, that describe themselves as ‘Flavourists’, and experience that “oh-shit” moment yourself. You can visit their site here.
